2025 was a year of serious focus for us. Behind the scenes, we rolled up our sleeves and rebuilt the foundation of our brewery from the ground up. From refining our brewing systems and tightening procedures to elevating quality control and investing in our people, every change was made with one goal in mind: to brew better beer, more consistently, for the community we love.

Over the past year, we modernized our brewing processes, fine-tuned our recipes, and strengthened our internal systems so we can grow without losing what makes us special. These upgrades weren’t about speed or scale alone—they were about precision, creativity, and long-term excellence.

Meet Nick
Our Brewer
A new chapter deserves the right leadership—and we’re proud to introduce the driving force behind our taps.
Our head brewer brings fresh perspective, deep technical expertise, and a passion for balance and drinkability. Every batch is approached with intention: honoring classic styles while pushing flavor forward in a way that feels thoughtful, not gimmicky.
The result? Beers that are clean, expressive, and made to be enjoyed—whether you’re a seasoned craft fan or just discovering your new favorite pour. We’re confident you’ll think our beers are worthy of the title “Best Breweries in Chicago.”
Before brewing, Nick served five years in the United States Marine Corps as a mechanic for F/A-18 Hornets. Precision, discipline, and a relentless pursuit of excellence defined his time in the service—qualities that now shape his approach to brewing. Whether fine-tuning a recipe, perfecting a pour, or experimenting with new ingredients, Nick puts his all into every batch.
Outside the brewery, Nick is all about family. He’s been happily married for nearly a decade and is a proud dad of two. When he’s not crafting the perfect pint, you’ll find him coaching his son’s Tee-ball team in the spring or cheering on his daughter at her ballet performances.
